Parsnip Soup

As its now the season for nice warm home-made soups can anyone point me in the direction of a recipe for parsnip soup?
 
Try this one - sounds pretty easy!

Ingredients
50g butter
225g Potatoes, peeled and chopped
225g Parsnips, peeled and chopped
175g Onions, chopped
1 pinch freshly ground salt and pepper
850ml chicken or vegetable stock
150ml Milk, or 75ml milk and 75ml cream
225g chorizo sausage, or kabanossi sausage, sliced into rounds, 1/4 cm thick


Method
Melt the butter in a saucepan on a low heat over the hob. Chuck the potatoes, parsnips and onions into the pan until coated in butter and season. Cover the vegetables with the saucepan lid and sweat over a gentle heat for 10 minutes.

Add the stock to the vegetables, bring to the boil and continue cooking until the vegetables are all soft (another 5 minutes or so). While the veggies are cooking, fry the chorizo in a splash of olive oil in a frying pan on the hob. Take off when it is crisp, reserving the oil.

When the vegetables are cooked, give the soup a quick whizz with a hand-blender till smooth, stir in the creamy milk and season to taste.

Serve a ladleful of the hot soup in a hot bowl, top with about 6 slices of cooked chorizo and drizzle a little of the oil from the pan over the top. Decorate with a few flat parsley leaves.
 
Why the :( about soup, MarkEE? It's luvverly stuff, especially any good home-made ones. I used to make a smashing veggie soup which was very filling, but helped to keep off the pounds when I was losing weight. Nice herbs or spices will jolly up any old soup - even a can of Campbell's Tomato goes better with a good splash of sherry in it, some croutons, and a sprinkle of Parmesan cheese, don't you think?
 
When/where/what? I can't think back to what I don't know, Pee... although sometimes you can finish that sentence after the first three words. :confused:

MARKEE known now as the SOUP-er DOG.. or HEINZ 57.... you'll have to suck um or lick um to death in future MARK.... :P

I love roast parsnips but never tried the soup as such...............
 
We may well be - I usually do soup as my Boxing Day shoot contribution to the food, so it will either be that, curried pumpkin or my xtra special roasted pepper soup!!

:lol: :lol: I'd forgotten about plumptious Dawn! I've just discovered some very nice, microwaveable egg noodles, which I've been enjoying with a sweet & sour sauce and some diced Pepperami. It's very bad for me, I'm sure, but I am truly not bothered about when cometh the hour - preferably AFTER I've eaten a pile of profiteroles slathered with chocolate sauce, if there is ANY natural justice in this world! I bet Dawny feels just the same. (Well, actually, I bet she does feel just the same - large, and somewhat squishy in places... )
