Food tried for the first time??

Love mussels. Mussels and clams in spaghetti tonight. eat them out of the shells mixed with good quality spaghetti. All made with lots of garlic, chilli flakes and some flat parsley. Add some of the pasta water to the mix to and that with the flavours and juices, is perfect

Mussels are the cheapest and by far the most underrated seafood.

The lovely Mrs Grass and myself are off out to a friends restaurant this evening, for a nosebag and a few glasses of bubbles. I'm thinking of going with this;

* Baked Isle of Arran cheddar, scallion and king scallop potato gratin

* Venison and root vegetable hot pot, seared wild mallard breast with braised red cabbage and a smoked partridge, pancetta and caramelised red onion bridie with spiced pear chutney

I had it tonight harry and was superb...

will post detailed recipe if you like. pretty easy really
 
I had "season and shake" for the first time last night. I didn't dance as I was shaking. I don't think it would have helped. It was edible.

Get a good quantities of mussels and clams in their shells. Mussels are cheap but clams are less so. This can be done with just mussels

chop up some garlic and chilli (or use chilli flakes) into some oil on a very low heat and let it absorb for about 10 minutes. Do not burn the garlic

cook the spaghetti. Use top quality stuff such as del cecco or bigoli de bassan until nearly done

add mussels and clams to frying pan with the garlic. I add a little pasta water at this point and turn up heat and stir them round until they all open (mussels open before clams)

Then add some more pasta water but not more than 1/4 a cup perhaps

Toss the spaghetti and chopped flat leaf parsley with the mussels and clams and thats it really

It comes out a lot better than you may expect. I love it
