I hope they didn't eat this beef on the same day it was slaughtered. It should hang for at least a fortnight, even longer for my taste. I never buy beef until it's on the cheap (almost out of date) shelf, and even then I keep it a week or so. I wait until it's a nice dark brown colour and then my poor old teeth can handle it!
They ate it literally minutes after it was slaughtered but did point out that usually the meat would hang for a number of days. As the butcher was preparing the cut of meat for the chef it was still twitching :what:

Crazy - what dd that achieve with regard to the General Public?

All read meat needs some time to mature before it is consumed. Beef definitely not less than three weeks - sometimes four in really cold weather. Lamb benefits from being hung for up to a month. Even pork needs a few days!

I've never met a vegan who looked like they couldn't use a good steak sandwich. They tend to by pale, skinny, wan and boringingly well intentioned. Is it just me who thinks this?

Not at all AC - I agree with you totally! You can spot a vegan from a mile off by their almost dishcloth grey colour....
