Monkfish!

I've been going next door to feed my neighbours cat for a few days whilst he has been In brixham sea fishing on his friends boat,

Anyway he came back today & brought me 6 Sea Bass & 6 monkfish tails,

The tails are not from a full size fish the tails are about 350gms so one good portion size, I have never had monkfish before so can anyone suggest a basic way of cooking them?
 
Pull the membrane off, cube it, skewer it (kebab skewers) alternating with some chunks of decent chorizo and sun-dried tomatoes. Under the grill (or griddle pan) for a couple of minutes, turning twice. Serve on a bed of salad, preferably rocket-based.
 
And re: the sea bass. Whilst they are great filleted and pan-fried (skins on and crispy) - skin them, poach them, mash them with new potato, make patties, roll them in flour and shallow fry them... rather decadent fish cakes.

Far far worse. It should be a jailable offence. You'd do that with farmed sea bass not wild. Never, never, wild. Maybe it's more precious to us Irish since we can't buy it.

Monkfish works well in curries and rich wine or garlicky sauces. I'm not a big fan to be honest, and the membrane is no fun to get off.
 
The less you do with fresh fish the better. Less is more !!!! In the oven, careful not to over do especially if it's a fan oven, if it's gone dry on top it's overdone. Loads of lemon.......yumyum.
 
Pour good-quality extra-virgin olive oil into a shallow pan, and grate lemon zest into it.

Add cherry tomatoes, black olives and capers.

Cover monkfish fillets in parma ham, add to the pan, and cover liberally with juice from lemon.

Cover with foil and cook.

Serve with boiled baby spuds and broccoli.

Place the Fish on a piece of MDF, and cut the mdf into the shape of the Fish. Place the fish on this cut out, season the fish with salt, olive oil and Garlic, and any other seasoning of your choosing. Place the Fish and MDF into a hot oven for 20 mins.

Remove, throw away the fish, and eat the MDF.

I've had farmed sea bass before as its the only type you can buy around here! but this is line caught wild bass so I am really looking forward to that & the crispy skin thing sounds lovely,

Well I've got 6 monkfish so will have ago at each of the suggustions above :D

I like the sound of the chorizo one!

I've just had Sea Bass* fish cakes as above. Delicious.

*It was farmed sea bass, just in case Melendez lets the police know that something fishy is going on.
 
Yeah, well, invite us all round, why don't you? What's the point of all this mmmm... it was lovely stuff, if we aren't going to be allowed to sample it?
 
One ive done for a years

fry onions and garlic til soft and add tablesppon of curry powder. blend for a minute or so. Add cubed monkfish and seal. Add white wine, enough to make a sauce. in oven for a while till just cooked. remove fish and add cream and blend.

monkfish is firm and robust enough to take anice rich sauce such as this. Flavour doesnt get swamped.

Its up there with john dory and sea bass as my fav fish

Yummy - monkfish and seal, mmm. Raymond Blanc, eat your coeur out. Personally, I prefer halibut and walrus, with a sprinkle of dried seaweed and a pinch of fox scat, to bring out that earthy zest. Served on a bed of fine-chopped haylage with a light lime and coconut sauce. C'est parfait!
 
Told a bird that i was chatting up once that i was a seal clubber...
